Gilbert ran his knowledge and talents full circle, culminating in accolades and a Rising Star Chef Award at Dallas' Luqa Restaurant. In 2010, Gilbert was elected to represent the United States as Executive Chef at the World Expo in Shanghai, China, where he showcased the Modern American Cuisine movement. Gilbert helms the state-of-the-art kitchen at Sustenio Restaurant at Hotel Elian Resort and Spa in San Anotonio, TX.
