HIGH FIBER BREAKFAST COOKIE
in large bowl combine 3/4 c brown sugar 1 stick soft butter 1/2 c unsweetened apple sauce 1/3 c raw cane sugar 1 whole organic egg + 2 egg whites 2 tsp vanilla
In another large bowl: 1 1/2 c whole wheat pastry flour 3/4 c unprocessed raw bran wheat 2 T cinnamon 1 tsp fresh ginger 1 tsp baking soda A pinch sea salt 1/4 c 5 grain bobs red mill plus flax cereal 1/2 c dried bing cherries 1/2 c pumpkin seeds
Mix the dry into the wet and combine. Using a cookie scoop that will allow you to make 24 cookies, Bake at 375 degrees for approx 8-10 min. Don’t overcook.
Health note; it’s impossible to make a good tasting baked good eliminating all butter, however cutting back more than 1/2 of what your typical cookie recipe calls for saves you 800 calories per batch!
Each cookie: 70 calories, 2.5 g fiber 4 grams of fat but only 1 saturated
Note: to encourage your children to enjoy keeping their little intestinal system clean, add a little dark chocolate chips!
